Camping Recipe: Barbecue Chicken Foil Packets

Ingredients

  • 1 ½ pounds baby potatoes
  • 2 tsps olive oil
  • 1 tbsp seasoning salt
  • ¼ tsp pepper
  • 4 boneless, skinless chicken breasts
  • ¼ cup bacon bits
  • ⅔ cup cheddar cheese shredded
  • 1 cup barbecue sauce divided
  • green onions or chives
  • 4 tbsps sour cream optional

Instructions:

  1. Preheat grill to medium high heat.
  2. Cut four large squares of heavy duty aluminum foil and four large squares of parchment paper. Separate the foil and top with a piece of parchment paper to prep your packets.
  3. Wash and dry the potatoes and slice thinly. Chop the green onions.
  4. Add a layer of sliced potatoes to the center of each packet, dividing them evenly among the packets. 
  5. Sprinkle with green onions and a drizzle of oil. Then generously salt and pepper the potatoes and onions. 
  6. Pat the chicken dry with a paper towel and season both sides with salt and pepper. 
  7. Place a chicken breast on top of the potatoes and brush with BBQ sauce, be sure to coat the bottom of the chicken with sauce as well.
  8. Carefully wrap the packets to seal them completely, rolling the sides together to ensure no steam escapes. 
  9. Place the packets on the grill, with the potato side down, and cook for 25 minutes until potatoes are tender and chicken has reached 165°F internal temperature.
  10. Remove the packet from the grill and cut open the foil. Beware of the steam! Brush the chicken with another layer of BBQ sauce and top with cheese and bacon. 
  11. Return the packets to the grill long enough to melt the cheese and then top with sour cream and chives!
